This simple bruschetta is one of our favorite ways to enjoy fresh tomatoes and herbs from the garden. Juicy tomatoes, fresh basil, garlic, and a drizzle of olive oil come together for an easy appetizer that's especially delicious served over crispy toasted sourdough.
It's simple, fresh, and a great way to turn ingredients from the garden into something everyone can gather around.
Ingredients
For the Bruschetta
- 2 cups fresh tomatoes, diced
- ¼ cup fresh basil, chopped
- 1–2 cloves garlic, finely minced
- 1–2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar, optional
- Salt and freshly ground black pepper, to taste
For the Toasted Sourdough
- 1 loaf sourdough bread
- Olive oil
- 1 garlic clove, optional
Instructions
1. Prepare the Tomatoes
Dice the tomatoes into small, bite-sized pieces and place them in a bowl.
Add the chopped fresh basil and minced garlic.
Drizzle with olive oil and balsamic vinegar, if using. Season with salt and pepper and gently toss everything together.
Allow the mixture to sit for 15–30 minutes before serving. This gives the flavors time to come together.
Tip: If your tomatoes are especially juicy, you can drain off a little of the excess liquid before serving so your sourdough stays crisp.
2. Toast the Sourdough
Slice your sourdough bread into approximately ½-inch slices.
Brush or drizzle both sides lightly with olive oil.
Toast the slices in a skillet, under the broiler, or on a grill until golden brown and crisp around the edges.
For an extra boost of garlic flavor, rub a cut garlic clove over the warm toasted bread.
3. Assemble
Spoon the fresh tomato mixture generously over each slice of toasted sourdough.
Finish with an additional drizzle of olive oil and a few fresh basil leaves if desired.
Serve immediately while the bread is crisp and the tomato mixture is fresh.
Make It Your Own
Bruschetta is easy to customize depending on what's growing in the garden or what you have in the pantry.
Try adding:
- Fresh mozzarella or Parmesan
- A drizzle of balsamic glaze
- Crumbled feta or goat cheese
- Fresh garden herbs
- Diced avocado
- A little chopped red onion
- Crushed red pepper for some heat
